My ALL TIME favorite cookies are homemade oatmeal cookies. My mom makes them the best! I tried substituting cinnamon applesauce in place of the shortening and they were AMAZING!!!! I started by adding all the ingredients and mixing just until blended. The dough will be soft. I put it in wax paper and rolled into a tube like shape and let it refrigerate for a few hours.
The dough will still be soft. I then opened the wax paper and cut slices of dough (about 1" thick) trying to make them all uniform so they cook evenly throughout. Pre-heat the oven to 350 degrees.Arrange onto cookie sheet and bake at 350 degrees for 10 min, or until the begin to brown.
Once the cookies are done baking remove from oven and let cool on the cookie sheet before removing to a cooling rack. The cookies will be soft, as they cool they will harden.
The cookies are delicious on their own. My favorite is to crumble them up and put them on top of vanilla yogurt will some cinnamon sprinkled on top. These are a delicious low calorie option that wont skimp on taste of flavor.
Cinnamon Oatmeal Cookies
1/2 cup Cinnamon Applsauce
1 cup Brown Sugar
1 cup Sugar
2 Eggs
-MIX-
1 tsp Vanilla
1 1/2 cup Flour (1/2 wheat 1/2 white preferred)
1 tsp Salt
1 tsp Baking Soda
3 cup Oatmeal (I prefer old fashioned oats)
Directions:
1. Mix first 3 ingredients then add remaining ingredients and mix until blended.
2. Place dough into wax paper and form tube and refrigerate for minimum of 1 hour, overnight if possible.
3. Preheat oven to 350 degrees
4. Cut dough into 1" thick rounds, dough will be soft.
5.Bake for 10 min or until dough is starting to burn. Let cool on pan and remove to wire rack. Allow time to cool.
6.Cookies will be soft. Can be eaten alone or atop yogurt and cinnamon.
