Chicken Enchiladas

Ingredients:
Shredded chicken (canned, rotisserie, or chicken breast)
2 TBL butter
2 TBL flour
2 cups chicken broth (low sodium preferred)
1 1/2 cups plain greek yogurt
2 cups shredded cheese
7 (10") flour tortillas
Optional toppings include; salsa, cilantro, sour cream, limes etc.

Directions:
1. Heat oven to 350 degrees.
2. In a skillet melt butter over medium heat and whisk in flour. Cook about 2 min, stirring constantly.
3. Gradually whisk in the broth. Stir in yogurt until sauce is smooth and lump free. Add 1 cup of cheese; stir well and set aside
4. Place 1/4 cup shredded chicken and 1 TBL cheese on each tortilla and roll up; place in ungreased 9x13inch casserole dish.5. Pour white sauce over the tortilla rolls and top with remaining cheese.
6. Bake 35 min or until cheese is melted.
